Chocolate and Banana Pancakes

The best part about the weekend for us? Lazy mornings with a yummy brunch. This recipe is the perfect balance of health and indulgence for your Sunday mornings. - 2 ripe bananas
- 2 eggs
- 1/2 cup rolled oats
- 1/2 teaspoon baking powder
- 2 tablespoons cocoa powder
- 1 1/2 tablespoon sweet freedom chocolate syrup
- 1 pinch of salt
- A few sprays of cooking oil
Begin by mashing the bananas in a large mixing bowl using a fork. When they have a liquid-like consistency, add both eggs and the chocolate syrup before combining.
Next add the oats, baking powder, cocoa powder and a pinch of salt before using a wooden spoon to mix it all together. Allow to rest for a few minutes.
While the mixture sits for a little while, add a few sprays of cooking oil to a frying pan on low heat. Once hot, dollop the mixture into the pan in a circle shape. Wait two minutes before flipping with a spatula.
When both sides are cooked - it’s time to plate up! Our favourite way to serve these is with a huge scoop of our Colombian Chocolate and Hazelnut ice-cream and grated dark chocolate. All that’s left to do is enjoy!
