We're sharing some recipe inspiration with you all for our BRAND NEW Cookies & Cream ice cream tub (now available in Morrisons). Gluten-free and easy-to-make, these ice cream bars are perfect to enjoy as a mid-afternoon snack to help power through those remaining end-of-day Zoom calls (5pm meetings are not the one...)!

COOKIES & CREAM ICE CREAM BARS WITH OPPO BROTHERS ICE CREAM
Ingredients
For the base:
- 1 cup of oats
- 1/2 cup of desiccated coconut
- 1 tbsp of coconut oil
- 1 tbsp of honey / agave syrup
For the filling:
- 1 tub of Oppo Brothers Cookies & Cream ice cream
For the coating:
- 100g of dark chocolate
- 1 tbsp of coconut oil
Method
- To make the base, pops the oats and desiccated coconut into a food processor and blitz to form a fine crumb.
- Add in the coconut oil and honey / agave syrup and blend to form a slightly sticky mixture. Feel free to add more honey / agave syrup if you feel the mixture is too dry.
- Line a baking tray with parchment paper.
- Press the mixture into the lined baking tray and pop into the freezer for 20 minutes
- Allow your Oppo Brothers Cookies & Cream ice cream tub to thaw and soften slightly, then spread this over your oat / coconut layer.
- Place your baking tray back into the freezer to set for a few hours.
- For the chocolate coating, melt the dark chocolate and coconut oil together.
- Once your bars have set, slice them into desired portion size and carefully coat each one in chocolate.
- Place onto a lined plate / new lined baking tray and return to the freezer for an hour or so.
